Because. I can't keep all these different foods according to the temperature to handle them, I will keep the list of food preparation, cooking and handling hung in the kitchen area all the time

The heating temperatures are the hardest to remember which is why having the chart posted in the kitchen is very helpful.. Ensuring food is keep in the safe zone is the hardest to implement in practice at our center and results in food having to be disposed of when leftovers are not stored properly soon enough,

I do not like to cook meat, so I would find it difficult to feed children the protein it provides and would end up feeding more fruits/veggies.

Knowing which meats and poultry on different cooking times. I have never been a cook at a school so I don't always remember. However, they are listed in the kitchen in case a teacher needs to cover the kitchen.

Ideally, food safety begins with us who are knowledgeable about the following
• Where contaminants exist
• How they transfer to food
• The steps to control or eliminate hazards
Remembering proper temperature for food safety could be challenging however, when in doubt always check and validate before preparing.

Sometimes the temperatures fail me. I will look them up before I ever begin cooking for children. Thankfully as an art teacher I never handle food for the children.

I agree with the above statements about the temperatures being the most difficult part. If I were working in the kitchen in our center I would definitely have to keep a cheat sheet as I do not prepare meats at home either and therefore never practice these enough to remember.

What I find it troubling is to remembering to check the temperature. I know the danger zone is between 41 and 135 but remember different kind of food such as ham and pork could be troubling because I don't eat these food

Which of the food handling and preparation regulations do you have the most trouble implementing? For me the hardest part is remembering what the exact temperatures are to be for each kind of food being prepared. When it comes to temperatures, there are so many to remember. Easiest way for this to happen correctly (cooking and cooling/storing of food) is to keep a chart on hand that is easily accessible to adhere to the standards.

When preparing food, I have the most difficulty with cooking times. I worry about undercooking, so I wind up overcooking food occasionally.

It would probably be most difficult to remember the correct cooking and holding temperatures. It is important to have temperature information posted in the kitchen with a cooking thermometer near by and the last date that the thermometer was tested.

The challenging part is memorizing all the temperatures of all food type however food handling videos can help you with that.

I think that most of it is common sense, but the hardest thing to remember is the different food temperatures and what they all should be at to avoid a food-borne illness. There is too many to try to remember.

Technically remembering cooking temp's for meats and other foods, but our facility does not serve meat, so while it's important/good to know the temperatures, it is not of absolute dire importance.

I think the hardest to remember is keeping foods cold below 41 degrees or less. For example after snack time if you don't use all the apple sauce you have to check the temp of the apple sauce before putting the container back in the fridge because it might not be good anymore.

I think the temperatures and "danger zone" are fairly easy to recall, especially if you have worked in food service before. It's a little more confusing for me to remember the reheat temperatures because I mistakenly think 140degrees is high enough but some foods actually need to be at 165degrees, even after being cooked the first time.

Maintaining temperature is generally the hardest, since busy days can mean that food for lunches is in classrooms before the classroom is ready to eat.
