There are many documents that need to be kept, a complete list can be found in the WAC's and additional ones may be required by USDA and the childcare site itself.
Some of the papers include an enrollment pack, immunization records, Emergency contact form, Children's attendance records, incident report forms, referral forms, possibly screeners or assessments. Also lesson plans, menus, staff applications, valid ID, disciplinary write ups, education transcripts and certificates. For a complete list refer back to the WACs the Center Handbook and any other program that you are participating in such as USDA and/or Early Achievers as examples.
